The reality of breakfast is that it’s challenging to make something stellar when you’re in a rush or maybe just super lazy. I get really lazy myself, and that’s when cereal comes in handy. But, for the breakfast days where I want to just have something a little more special, I’m always turning to pancakes. Yes, I know, mixing batter from flour can be a pain, but once you knock this recipe down, you’ll be able to have simple pancakes anytime you’d like. Best of all, they will be Vegan.
In this recipe I’m stacking my pancakes full of matcha powder for anti-oxidants. I’ve also replaced the eggs with applesauce and the dairy with oat milk for the perfect combination of fluffy goodness. Lastly, we’ll be stuffing the pancakes with chocolate chips, which makes for a real special way to take your pancakes to the next level.

- 1 cup whole wheat flour
- 2 tsp baking powder
- 1 tbsp coconut sugar
- 1 tsp matcha powder
- 1/4 tsp kosher salt
- 1/8 tsp ground nutmeg
- 1/4 tsp tsp cinnamon
- 1 cup oat milk
- 4 tbsp apple sauce
- 1/4 tsp vanilla extract
- 1/4 cup chocolate chip
- 3 tbsp coconut oil
- 1/4 cup maple syrup
Ingredients

- Whisk all ingredients in a bowl, adding oat milk last. If batter is clumpy, add 1 tbsp of water until you achieve smooth texture.
- heat a non stick pan over low-medium heat. Add 1 tbsp of coconut oil and lay over batter to make two pancakes per pan. Heat pancakes on one side until bubbles form (~2 minutes). Add in chocolate chips and cover them with pancake batter. Once covered, flip pancakes over and cook for another 2 minutes.
- To serve, plate and sprinkle matcha over pancakes using a fine mesh strainer. Add fruit toppings of your choice and serve with warm maple syrup
