One of my go-to quick lunch meal is vegan Kimchi fried rice. It doesn’t even have to be prepared in a fancy or complicated way. You just throw some rice onto the pan, add a bit of Kimchi, soy sauce, and sesame seed oil, then you’re good to go.
Of course, that isn’t the end of my vegan Kimchi fried rice recipe. In the video, you’ll see that I’ve added mushrooms for that savory taste, and I chose jasmine rice, my preference of white rice. Overall, this recipe will take 15-20 minutes of your time, possibly even less.
This quick lunch idea was inspired by my recent move to LA. Moving is such a hectic and tiring process that it barely gives you any time to really think about food you really want to prepare. When I had to pack, I didn’t realize how much kitchen stuff I had. It was a successful move and I’m glad it’s to a place in vibrant LA. - 2 cups White rice
- 2 tsp sesame oil
