Vegan Breakfast Hash – My Top Potato Recipe With Imperfect Foods

Breakfast blog! I made my fave go-to breakfast: vegan breakfast hash. It takes about 20 to 30 minutes to make. I got my ingredients from Imperfect Produce, a delivery service for your produce needs. The cool part about this is that they take surplus veggies from groceries and farmer’s markets and deliver it to you guys for 30% cheaper.

Back to the recipe. First things first, I dice a bunch of potatoes (the main ingredient, of course), tomatoes, onions, and bell peppers. Next, marinate the potatoes in olive oil, salt, and pepper; then place them on to a pan until they’re crispy on the outside and soft on the inside. Next, add a bit of chili powder, ground cumin, and onion powder to season the sizzling potatoes.

Take the potatoes aside, and add in the roma tomatoes, onions, and bell peppers. Once ready, add the potatoes back in and top it off with some herbs. This time, I added some left over black beans, which I personally prefer in my potato hash.

Lastly, I toss the tortillas onto open flame, around 30 seconds each side. Place all of the hash onto a plate, add some avocado and green sauce, with the tortillas and you’re done!
