Whenever I travel, I like to think of recipes I can make without the hassle of worrying about the ingredients. Thus, my potato and lentil hash is born. It’s quick, easy, and vegan (of course). Key ingredients include potato, lentils, avocado, and some mayo.
This recipe will take you 20 minutes and only a handful of ingredients you probably already have. For some reason, best quick recipe I always come up with always involves potato hash.
While I’m here in Kauai, I might as well have a good meal and a great view, right?
- 2 potatoes
- 1/2 yellow onion
- 1 avocado
- 1 pack Maya Kaimal Black Lentil & Tomatoes
- 2 tbsp extra virgin olive oil
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 tbsp vegan mayo
